Intro and Chicken Soup

I'm beginning this blog as a way to keep track of the recipes I try and those that I make up in brief moments of creativity. Enjoy!

Last night I came up with this Chicken Soup and Des wouldn't stop eating it. By the time he was done, it was almost bedtime and his little tummy was poking out like a beer gut.

2 Tbs. coconut oil
1 onion, sliced thinly
2 cloves garlic, chopped
7 small carrots, cut into 1" pieces
2 small Yukon Gold potatoes, cut into 1" pieces and peeled if they aren't organic
1 tsp. curry powder
1/2 tsp. coriander
1 tsp. sea salt
1 bag/box of egg noodles (I used some gluten free corn flour noodles)

Heat coconut oil over medium heat. Add garlic to oil and saute a few second then add onions. Cook onions for 5 minutes until softened. Add carrots, potatoes and chicken stock. Stir in spices and salt. Simmer 10-15 minutes until carrots and potatoes are almost tender. Add noodles and cook until done to your liking. GF noodles took about 8 minutes.

There you go!
